Zucchini Relish

10 Cups ground Zucchini – (grind with food grinder)

4 Cups onion
4 Tablespoons salt
Mix and let stand overnight, drain rinse with cold water and drain again
also 2 ¼ cup Vinegar
6 Cups sugar
2 tsp. celery seed
½ tsp. Black pepper
1 tsp. turmeric
1 tsp. Dry mustard
1 large green paper – chopped
1 large red paper – chopped
And a few drops of green food coloring cook for 30min and seal in Sterile jars.
Stir often to keep from Sticking
Hot pock 15 minutes
